This is something that requires a little effort, a weekend breakfast if you like. It's worth the effort though! This breakfast was inspired by the 'Croque Madame muffins' from the Little Paris Kitchen... Seb bought me the recipe book a while ago and I had sadly failed to pick it up much since my initial enthusiasm...
This is the recipe I had been wanting to try since watching the show... searching out cafés with wifi when I lived in La Rochelle last year & downloading the show religiously every week... but then being unable to try due to lack of oven!
I slightly altered this recipe, replacing the ham with leeks & brie, as you can see above! The whole thing was absolutely delicious... I would be tempted to say about 3 each would be just about enough... :D
So here's roughly how to make it...
- Make a cheese sauce (1 tbsp flour, 1 tbsp butter, melt together, gradually whisk in milk to make a smooth sauce, then let it thicken for a few minutes. Season, add a little grated cheese, mustard & nutmeg)
- Get some sliced bread and roll it flat with a rolling pin. Then melt some butter & brush it onto both sides & line a muffin tin with it.
- Fry some leeks in butter, then place into your bread-muffin moulds, with some brie if you can fit it in! Break a small egg and drain off about half the white, then pop it onto the leeks. Finally pour in some white sauce... then bake for about 15 minutes!
